Ingredients

  • 2.2 lbbone-in chicken thighs, skin removed
  • 4 tbsplemon juice
  • 5 glemon zest
  • 5 clovesgarlic cloves, minced
  • 20 gfresh flat-leaf parsley, chopped
  • 5 gdried oregano
  • 1 tbspolive oil
  • 1 to tastesalt and black pepper

Instructions

  1. Combine lemon juice, zest, garlic, parsley, oregano, olive oil, salt, and pepper. Score chicken pieces and coat in marinade. Rest 10 min (or refrigerate overnight).
  2. Heat a griddle pan or grill over medium-high heat.
  3. Cook chicken thighs 8–9 min per side until cooked through and charred grill marks appear.
  4. Rest 5 min. Serve with chimichurri, salad, or roasted potatoes.
