  • 180 gchicken breast
  • 150 gbrown rice cooked
  • 80 gchickpeas canned
  • 80 gred capsicum roasted
  • 15 gparsley
  • 2 wholegarlic cloves
  • 20 mlred wine vinegar
  • 40 mlolive oil
  • 1 gchilli flakes

Ingredients

  • 180 g chicken breast
  • 150 g brown rice cooked
  • 80 g chickpeas canned
  • 80 g red capsicum roasted
  • 15 g parsley
  • 2 whole garlic cloves
  • 20 ml red wine vinegar
  • 40 ml olive oil
  • 1 g chilli flakes

Instructions

  1. Make chimichurri: blend parsley, garlic, vinegar, oil, and chilli.
  2. Season and grill chicken 6 min per side; rest and slice.
  3. Build bowl: rice, chickpeas, roasted capsicum.
  4. Top with chicken slices.
  5. Drizzle generous chimichurri.
