Ingredients

  • 1.5 lblarge shrimp, peeled and deveined
  • 6 wholedried chiles de árbol
  • 4 wholedried guajillo chiles, seeded
  • 3 wholetomatoes
  • 4 clovesgarlic cloves
  • 0.5 wholewhite onion
  • 0.8 cupchicken or shrimp stock
  • 1 tbspoil
  • 1 to tastesalt
  • 2 wholelime wedges, to serve

Instructions

  1. Toast chiles on a dry comal 30 seconds per side. Soak in hot water 15 min; drain.
  2. Blend soaked chiles, tomatoes, garlic, onion, and stock until completely smooth.
  3. Heat oil over medium-high in a wide pan; strain sauce into pan. Fry, stirring, 5 min until deepened in color.
  4. Season sauce with salt. Add shrimp; cook 3–4 min until pink and coated in sauce.
  5. Serve immediately over rice with lime wedges.
