Ingredients

  • 600 gfresh large shrimp, butterflied and cleaned
  • 150 mllime juice (freshly squeezed)
  • 3 wholeserrano or jalapeño chilli
  • 1 wholecucumber, thinly sliced
  • 0.5 wholered onion, thinly sliced
  • 20 gfresh coriander
  • 1 to tastesalt

Instructions

  1. Blend lime juice, chillies, coriander, and salt into a smooth green sauce.
  2. Arrange shrimp in a single layer in a flat dish; cover with the aguachile sauce.
  3. Cure 5–10 min until shrimp turn opaque (the acid "cooks" them).
  4. Top with cucumber, red onion, and extra coriander.
  5. Serve immediately with tostadas.
