Ingredients
- 1.3 lbwhole trout, cleaned (or 2 large fillets)
- 1.1 ozplain flour
- 1.4 ozunsalted butter
- 1.1 ozflaked almonds
- 1 wholelemon
- 10 gfresh dill
- 1 to tastesalt and white pepper
Instructions
- Pat trout dry; season with salt and white pepper, dust with flour.
- Melt half the butter in a pan over medium-high; fry trout 4–5 min per side until golden.
- Remove fish; add remaining butter to pan. Toast almonds until golden.
- Pour almond butter over fish. Squeeze lemon, scatter dill.
