Ingredients
- 4 wholelarge bell peppers, halved and deseeded
- 1.1 lbground turkey (93% lean)
- 7.1 ozcooked quinoa
- 14.1 ozcanned diced tomatoes
- 1 wholeonion, diced
- 3 clovesgarlic cloves, minced
- 1 tspcumin
- 1 tspsmoked paprika
- 2.1 ozreduced-fat cheddar, shredded
- 1 tbspolive oil
- 1 to tastesalt and pepper
Instructions
- Preheat oven to 200ยฐC / 400ยฐF. Lightly oil a baking dish.
- Heat olive oil in a skillet over medium-high. Add onion and cook 3 min. Add garlic, cumin, and paprika; cook 1 min.
- Add ground turkey; cook, breaking up, until no longer pink, about 6 min.
- Stir in diced tomatoes and quinoa. Season generously. Simmer 5 min.
- Arrange pepper halves in baking dish. Fill each with turkey-quinoa mixture.
- Top with shredded cheddar. Bake 25 min until peppers are tender and cheese is bubbly.
