Ingredients

  • 2 lblean ground beef (or turkey)
  • 2 tbsptaco seasoning
  • 2.5 cupwhite rice, cooked
  • 0.3 cupfresh cilantro, chopped
  • 2 tbsplime juice
  • 1 canblack beans, drained
  • 1 cupfrozen corn, thawed
  • 1 cuppico de gallo
  • 5 tbspGreek yogurt or sour cream
  • 0.5 cupshredded Mexican cheese blend

Ingredients

  • 2 lb lean ground beef (or turkey)
  • 2 tbsp taco seasoning
  • 2.5 cup white rice, cooked
  • 0.25 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 can black beans, drained
  • 1 cup frozen corn, thawed
  • 1 cup pico de gallo
  • 5 tbsp Greek yogurt or sour cream
  • 0.5 cup shredded Mexican cheese blend

Instructions

  1. Brown ground meat in a skillet over medium-high heat. Drain fat.
  2. Add taco seasoning and 2 tbsp water. Stir and simmer 2–3 min.
  3. Mix cooked rice with cilantro and lime juice for cilantro rice.
  4. Warm black beans and corn together.
  5. Portion into 5 containers: cilantro rice, taco meat, beans, corn, pico.
  6. Top with cheese and a dollop of Greek yogurt.
