Ingredients
- 700 gchicken breasts, thinly sliced
- 3 wholemixed bell peppers (red, green, yellow), sliced
- 1 wholeonion, thinly sliced
- 3 clovesgarlic cloves, minced
- 8 gchili powder
- 4 gcumin
- 4 gsmoked paprika
- 30 mllime juice
- 15 mlolive oil
- 1 to tastesalt and pepper
- 10 gfresh cilantro, to serve
Instructions
- Combine chili powder, cumin, paprika, salt, and pepper. Toss chicken slices with half the spice mix and lime juice; marinate 5 min.
- Heat oil in a large skillet or cast-iron pan over high heat.
- Cook chicken in a single layer 3โ4 min per side until cooked through. Remove and set aside.
- In the same pan, add peppers and onion with remaining spice mix. Cook 5โ6 min, stirring, until softened and slightly charred.
- Add garlic; cook 1 min. Return chicken; toss together.
- Serve over rice or in warm tortillas, topped with fresh cilantro.
