Ingredients
- 800 gchicken pieces (legs and thighs)
- 120 mlwhite wine vinegar
- 60 mlolive oil
- 2 wholeonion, sliced in rings
- 1 wholecarrot, sliced
- 4 wholegarlic cloves
- 2 wholebay leaves
- 6 wholeblack peppercorns
- 1 tspdried oregano
- 1 to tastesalt
Instructions
- Brown chicken pieces in 30ml olive oil over medium-high heat; set aside.
- In same pot, sautรฉ onion, carrot, and garlic until softened.
- Return chicken. Add vinegar, remaining oil, bay leaves, peppercorns, oregano, and salt.
- Add just enough water to cover halfway. Simmer covered 30 min until chicken is cooked through.
- Cool in liquid, refrigerate at least 2 hours. Serve cold or gently reheated with crusty bread.
