Ingredients

  • 600 gwhole trout, cleaned (or 2 large fillets)
  • 30 gplain flour
  • 40 gunsalted butter
  • 30 gflaked almonds
  • 1 wholelemon
  • 10 gfresh dill
  • 1 to tastesalt and white pepper

Instructions

  1. Pat trout dry; season with salt and white pepper, dust with flour.
  2. Melt half the butter in a pan over medium-high; fry trout 4–5 min per side until golden.
  3. Remove fish; add remaining butter to pan. Toast almonds until golden.
  4. Pour almond butter over fish. Squeeze lemon, scatter dill.
