Ingredients

  • 800 gchicken pieces (legs and thighs)
  • 120 mlwhite wine vinegar
  • 60 mlolive oil
  • 2 wholeonion, sliced in rings
  • 1 wholecarrot, sliced
  • 4 wholegarlic cloves
  • 2 wholebay leaves
  • 6 wholeblack peppercorns
  • 1 tspdried oregano
  • 1 to tastesalt

Instructions

  1. Brown chicken pieces in 30ml olive oil over medium-high heat; set aside.
  2. In same pot, sautรฉ onion, carrot, and garlic until softened.
  3. Return chicken. Add vinegar, remaining oil, bay leaves, peppercorns, oregano, and salt.
  4. Add just enough water to cover halfway. Simmer covered 30 min until chicken is cooked through.
  5. Cool in liquid, refrigerate at least 2 hours. Serve cold or gently reheated with crusty bread.
