Ingredients

  • 120 gmature cheddar, grated
  • 4 wholewholegrain bread slices
  • 60 mldark ale
  • 10 gEnglish mustard
  • 5 mlWorcestershire sauce
  • 1 wholeegg yolk
  • 4 wholeeggs (for poaching)
  • 1 pinchcayenne pepper

Instructions

  1. Melt cheese with ale, mustard, Worcestershire, and cayenne in a saucepan over low heat, stirring.
  2. Remove from heat; beat in egg yolk.
  3. Toast bread; spread cheese mixture thickly over each slice.
  4. Grill under high heat 3–4 min until bubbling and browned.
  5. Poach eggs in simmering water 3 min; top each rarebit slice.
