Ingredients
- 120 gmature cheddar, grated
- 4 wholewholegrain bread slices
- 60 mldark ale
- 10 gEnglish mustard
- 5 mlWorcestershire sauce
- 1 wholeegg yolk
- 4 wholeeggs (for poaching)
- 1 pinchcayenne pepper
Instructions
- Melt cheese with ale, mustard, Worcestershire, and cayenne in a saucepan over low heat, stirring.
- Remove from heat; beat in egg yolk.
- Toast bread; spread cheese mixture thickly over each slice.
- Grill under high heat 3–4 min until bubbling and browned.
- Poach eggs in simmering water 3 min; top each rarebit slice.
