  • smoked salmon
  • eggs
  • English muffins
  • Greek yoghurt
  • egg yolk
  • lemon juice
  • Dijon mustard
  • white wine vinegar
  • fresh dill

Ingredients

  • 150 g smoked salmon
  • 4 whole eggs
  • 2 whole English muffins
  • 100 g Greek yoghurt
  • 1 piece egg yolk
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • few sprigs fresh dill

Instructions

  1. Blend yoghurt, egg yolk, lemon juice and mustard in a small pan. Warm gently until thickened, 3 minutes.
  2. Fill a deep pan with water, add vinegar, bring to gentle simmer.
  3. Split and toast muffins.
  4. Crack eggs into simmering water, poach 3 minutes.
  5. Layer muffin halves with smoked salmon, poached egg, hollandaise and dill.
