Ingredients
- smoked salmon
- eggs
- English muffins
- Greek yoghurt
- egg yolk
- lemon juice
- Dijon mustard
- white wine vinegar
- fresh dill
Ingredients
- 150 g smoked salmon
- 4 whole eggs
- 2 whole English muffins
- 100 g Greek yoghurt
- 1 piece egg yolk
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tbsp white wine vinegar
- few sprigs fresh dill
Instructions
- Blend yoghurt, egg yolk, lemon juice and mustard in a small pan. Warm gently until thickened, 3 minutes.
- Fill a deep pan with water, add vinegar, bring to gentle simmer.
- Split and toast muffins.
- Crack eggs into simmering water, poach 3 minutes.
- Layer muffin halves with smoked salmon, poached egg, hollandaise and dill.
