Ingredients

  • 4 wholelarge bell peppers, halved and deseeded
  • 500 gground turkey (93% lean)
  • 200 gcooked quinoa
  • 400 gcanned diced tomatoes
  • 1 wholeonion, diced
  • 3 clovesgarlic cloves, minced
  • 1 tspcumin
  • 1 tspsmoked paprika
  • 60 greduced-fat cheddar, shredded
  • 15 mlolive oil
  • 1 to tastesalt and pepper

Instructions

  1. Preheat oven to 200ยฐC / 400ยฐF. Lightly oil a baking dish.
  2. Heat olive oil in a skillet over medium-high. Add onion and cook 3 min. Add garlic, cumin, and paprika; cook 1 min.
  3. Add ground turkey; cook, breaking up, until no longer pink, about 6 min.
  4. Stir in diced tomatoes and quinoa. Season generously. Simmer 5 min.
  5. Arrange pepper halves in baking dish. Fill each with turkey-quinoa mixture.
  6. Top with shredded cheddar. Bake 25 min until peppers are tender and cheese is bubbly.
