Ingredients

  • 500 gbeef chuck diced
  • 300 gsweet potato diced
  • 2 wholecorn on the cob sliced
  • 200 gcanned peach halves
  • 1 wholeonion chopped
  • 2 wholetomato chopped
  • 500 mlbeef stock
  • 15 mlolive oil

Instructions

  1. Brown beef in olive oil in a heavy pot; set aside.
  2. Sautรฉ onion and tomato until soft.
  3. Return beef; pour in stock; simmer 30 min.
  4. Add sweet potato and corn; cook 15 min.
  5. Stir in peach halves; warm 5 min.
  6. Season and serve hot.
