Ingredients
- 14.1 ozraw king prawns, peeled
- 3 wholeleeks, sliced
- 14.1 ozcanned cannellini beans, drained
- 3.4 cupfish or vegetable stock (low sodium)
- 2 clovesgarlic cloves, minced
- 2.1 ozhalf-fat crème fraîche
- 1 tbsplemon juice
- 10 gfresh dill, chopped
- 1 tbspolive oil
- 1 to tastesalt and white pepper
Instructions
- Heat oil in a large saucepan. Add leeks and garlic; cook gently 5 min until softened.
- Add stock and cannellini beans. Simmer 5 min.
- Blend half the soup for a creamier texture, then return to the pan.
- Add prawns; cook 3–4 min until pink and cooked through.
- Stir in crème fraîche and lemon juice. Season and finish with fresh dill.
