Ingredients
- 7.1 ozsmoked mackerel fillets, skin removed and flaked
- 8.8 ozcooked puy lentils
- 7.1 ozcooked beetroot, diced
- 2.1 ozwatercress
- 3.5 ozcucumber, diced
- 2.8 ozlow-fat Greek yogurt
- 15 gcreamed horseradish
- 1 tbsplemon juice
- 15 gcapers
- 1 to tastesalt and black pepper
Instructions
- Mix Greek yogurt, horseradish, and lemon juice together. Season with salt and pepper to make the dressing.
- Divide lentils between two bowls. Top with beetroot, cucumber, and watercress.
- Place flaked mackerel on top. Scatter capers over.
- Drizzle horseradish dressing generously and serve immediately.
