  • lean pork sausages
  • green lentils
  • tinned tomatoes
  • carrots
  • celery
  • onion
  • garlic
  • smoked paprika
  • chicken stock
  • fresh thyme
  • olive oil

Ingredients

  • 400 g lean pork sausages
  • 200 g green lentils
  • 400 g tinned tomatoes
  • 2 medium carrots
  • 2 sticks celery
  • 1 large onion
  • 3 cloves garlic
  • 1.5 tsp smoked paprika
  • 400 ml chicken stock
  • 3 sprigs fresh thyme
  • 1 tbsp olive oil

Instructions

  1. Brown sausages in oil, cut into chunks. Set aside.
  2. Fry onion, carrot, celery and garlic 5 minutes.
  3. Add paprika and thyme, cook 1 minute.
  4. Add lentils, tomatoes and stock. Bring to boil.
  5. Return sausages. Simmer 20 minutes until lentils tender.
  6. Season and serve.
