High-Protein Cottage Pie

  • extra lean beef mince 5%
  • potatoes
  • cauliflower
  • carrots
  • celery
  • onion
  • beef stock
  • Worcestershire sauce
  • tomato paste
  • skimmed milk
  • olive oil

Ingredients

  • 600 g extra lean beef mince 5%
  • 400 g potatoes
  • 300 g cauliflower
  • 2 medium carrots
  • 2 sticks celery
  • 1 large onion
  • 300 ml beef stock
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 50 ml skimmed milk
  • 1 tbsp olive oil

Instructions

  1. Preheat oven 190°C. Brown mince in a dry pan, drain fat.
  2. Add onion, carrots, celery to pan with oil. Cook 5 minutes.
  3. Stir in tomato paste, Worcestershire, stock. Simmer 20 minutes until thick.
  4. Boil potatoes and cauliflower until tender. Mash with milk and seasoning.
  5. Spoon mince into baking dish, top with mash. Fork the surface.
  6. Bake 25 minutes until golden. Rest 5 minutes before serving.
