Grilled Sea Bass with Lemon and Herbs

  • sea bass fillets skin-on
  • lemon
  • fresh thyme
  • capers
  • olive oil
  • butter
  • garlic
  • flat-leaf parsley
  • salt and pepper

Ingredients

  • 400 g sea bass fillets skin-on
  • 1 whole lemon
  • 4 sprigs fresh thyme
  • 1 tbsp capers
  • 1 tbsp olive oil
  • 10 g butter
  • 1 clove garlic
  • handful flat-leaf parsley
  • to taste salt and pepper

Instructions

  1. Pat sea bass dry with kitchen paper. Score skin, season both sides.
  2. Heat oil in a non-stick pan until very hot.
  3. Place fish skin-side down, press flat for 30 seconds. Cook 4–5 minutes undisturbed.
  4. Flip, cook 2 minutes. Add butter, garlic, thyme and capers.
  5. Baste fish with foaming butter 1 minute.
  6. Serve with lemon juice and parsley.
