Ingredients
- chicken breast
- peanut butter
- coconut milk
- soy sauce
- lime juice
- garlic
- ginger
- chilli flakes
- honey
- sesame oil
- fresh coriander
Ingredients
- 500 g chicken breast
- 3 tbsp peanut butter
- 100 ml coconut milk
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 cloves garlic
- 1 cm ginger
- 0.5 tsp chilli flakes
- 1 tsp honey
- 1 tsp sesame oil
- handful fresh coriander
Instructions
- Blend half the peanut butter, soy sauce, lime, garlic, ginger, chilli, honey and sesame for marinade.
- Cube chicken, coat in marinade, thread on skewers. Rest 10 minutes.
- Grill 5–6 minutes each side until charred.
- Warm remaining peanut butter with coconut milk and remaining sauce ingredients for dipping sauce.
- Serve skewers with dipping sauce and coriander.
