- lean beef chuck
- British ale
- beef stock
- carrots
- parsnips
- onion
- garlic
- tomato paste
- fresh thyme
- bay leaves
- olive oil
- cornflour
Ingredients
- 700 g lean beef chuck
- 330 ml British ale
- 400 ml beef stock
- 3 medium carrots
- 2 medium parsnips
- 1 large onion
- 3 cloves garlic
- 2 tbsp tomato paste
- 4 sprigs fresh thyme
- 2 pieces bay leaves
- 1 tbsp olive oil
- 1 tbsp cornflour
Instructions
- Brown beef in batches in hot oil, set aside.
- Fry onion and garlic 5 minutes. Add tomato paste, cook 1 minute.
- Return beef. Pour in ale and stock. Add thyme, bay, carrots and parsnips.
- Bring to simmer, cover and cook low 80 minutes until beef is tender.
- Mix cornflour with cold water, stir in to thicken. Simmer 5 minutes. Season and serve.
