Ingredients
- 1000 g beef brisket
- 100 g lard
- 6 cloves garlic
- 3 units bay leaves
- 3 g cumin
- 12 g salt
- 16 units corn tortillas
- 100 g white onion
- 20 g cilantro
- 150 ml green salsa
Instructions
- Slice brisket into flat pieces, season with salt and cumin.
- Melt lard in wide heavy pan, add brisket, garlic and bay.
- Cook uncovered on low heat 1.5 hours until fat renders.
- Increase heat and fry suadero until golden and slightly crispy.
- Chop into small pieces.
- Serve in warm double-corn tortillas with diced onion, cilantro and green salsa.
