  • pork shoulder
  • dried black beans
  • chipotle chiles in adobo
  • onion
  • garlic
  • epazote
  • lard
  • salt

Ingredients

  • 700 g pork shoulder
  • 300 g dried black beans
  • 2 units chipotle chiles in adobo
  • 150 g onion
  • 5 cloves garlic
  • 5 g epazote
  • 20 g lard
  • 8 g salt

Instructions

  1. Soak beans overnight, drain.
  2. Cube pork, brown in lard with onion and garlic.
  3. Add beans, chipotle, epazote and enough water to cover.
  4. Bring to boil, reduce heat and simmer 1.5 hours.
  5. Season and serve with corn tortillas.
