Ingredients

  • 1.1 lbcooked chicken breast, shredded
  • 14.1 ozcanned hearts of palm, drained and sliced
  • 7.1 ozcherry tomatoes, halved
  • 5.3 ozcanned corn, drained
  • 0.5 wholered onion, thinly sliced
  • 20 gfresh flat-leaf parsley, chopped
  • 2 tbsplemon juice
  • 1 tbspolive oil
  • 10 gDijon mustard
  • 1 to tastesalt and black pepper

Instructions

  1. Whisk lemon juice, olive oil, Dijon mustard, salt, and pepper for vinaigrette.
  2. Combine hearts of palm, cherry tomatoes, corn, and red onion in a large bowl.
  3. Add shredded chicken and toss with two-thirds of the vinaigrette.
  4. Garnish with parsley and drizzle remaining dressing. Serve immediately or chill.
