Ingredients

  • 2 wholelarge corn tlayuda tortillas (or large flour tortillas)
  • 10.6 oztasajo or lean flank steak, grilled and sliced
  • 7.1 ozblack bean paste
  • 4.2 ozOaxacan string cheese (quesillo) or mozzarella
  • 3.5 ozcabbage, finely shredded
  • 1 wholetomato, sliced
  • 1 wholeavocado, sliced
  • 1 tspdried oregano

Instructions

  1. Grill or toast tortillas directly on flame until lightly charred on both sides.
  2. Spread black bean paste evenly over each tortilla.
  3. Top with cheese; return to heat briefly to melt.
  4. Layer on beef strips, cabbage, tomato, and avocado.
  5. Fold in half or serve flat. Finish with dried oregano.
