Ingredients
- 14.1 ozmasa harina
- 14.1 ozchicken breast, cooked and shredded
- 3 wholepoblano chillies, roasted, peeled and sliced
- 5.3 ozOaxacan or mozzarella cheese, shredded
- 1.7 cupchicken stock (warm)
- 2.8 ozlard or coconut oil
- 2 tspbaking powder
- 16 wholedried corn husks, soaked
- 1 to tastesalt
Instructions
- Beat lard with baking powder until fluffy. Beat in masa harina alternately with warm stock until dough is spreadable.
- Spread masa on soaked husks. Top with chicken, chile strips, and cheese.
- Fold husks to enclose. Steam upright in a large pot 50–60 min until masa pulls cleanly.
- Rest 10 min before serving.
