Ingredients

  • 1.8 lbchicken thighs, boneless skinless
  • 3 wholechipotle chillies in adobo (with sauce)
  • 2 wholeancho chilli, toasted and soaked
  • 4 wholegarlic cloves
  • 2 tbspapple cider vinegar
  • 1 tspcumin
  • 1 tspdried oregano
  • 0.6 cupchicken stock
  • 1 to tastesalt

Instructions

  1. Blend chipotles, ancho chillies, garlic, vinegar, cumin, oregano, and stock into adobo sauce.
  2. Marinate chicken in sauce at least 1 hour.
  3. Heat pan; brown chicken 3 min per side. Add remaining marinade.
  4. Simmer covered 25โ€“30 min until cooked through and sauce thickens.
  5. Shred if desired; serve with rice, beans, or in warm tortillas.
