Jalisco-style beef birria — chuck braised in dried chile and spice consommé until fork-tender. Serve as tacos or soup for 50g protein of rich, smoky Mexican perfection.

Ingredients
- 2.6 lbbeef chuck, cubed
- 4 wholeancho chillies, deseeded
- 4 wholeguajillo chillies, deseeded
- 2 wholechipotle chilli in adobo
- 5 wholegarlic cloves
- 3 wholetomatoes
- 1 wholeonion
- 2.1 cupbeef stock
- 1 tspcumin
- 1 tspdried oregano
- 2 wholebay leaves
- 2 tbspapple cider vinegar
- 1 to tastesalt
Instructions
- Toast dried chillies in dry pan 30 sec per side; soak in hot water 15 min.
- Blend soaked chillies with tomatoes, onion, garlic, chipotle, cumin, oregano, vinegar, and stock.
- Season and marinate beef in sauce at least 1 hour.
- Braise beef with sauce and bay leaves at 160°C for 2.5–3 hours until very tender.
- Shred beef; serve in tacos with consommé on the side for dipping.
