Ingredients

  • turkey pieces
  • chihuacle negro chiles
  • mulato chiles
  • pasilla chiles
  • dark chocolate
  • tomatoes
  • tomatillos
  • garlic
  • onion
  • sesame seeds
  • pumpkin seeds
  • turkey or chicken broth
  • lard

Ingredients

  • 1200 g turkey pieces
  • 5 units chihuacle negro chiles
  • 4 units mulato chiles
  • 3 units pasilla chiles
  • 60 g dark chocolate
  • 300 g tomatoes
  • 200 g tomatillos
  • 6 cloves garlic
  • 200 g onion
  • 40 g sesame seeds
  • 40 g pumpkin seeds
  • 800 ml turkey or chicken broth
  • 40 g lard

Instructions

  1. Toast, char slightly and soak all chiles.
  2. Fry tomatoes, tomatillos, onion, garlic, sesame and pumpkin seeds.
  3. Blend everything in batches with broth.
  4. Fry blended mole in lard until very dark and thick, stirring constantly.
  5. Add chocolate and enough broth to consistency.
  6. Simmer turkey in mole 30 min.
  7. Serve with white rice and sesame garnish.
