  • guajillo chiles
  • chipotle chiles
  • garlic
  • white vinegar
  • cumin
  • oregano
  • bay leaves
  • cloves
  • beef broth

Ingredients

  • 1000 g beef cheeks or short ribs
  • 6 units guajillo chiles
  • 2 units chipotle chiles
  • 8 cloves garlic
  • 30 ml white vinegar
  • 3 g cumin
  • 3 g oregano
  • 3 units bay leaves
  • 4 units cloves
  • 250 ml beef broth

Instructions

  1. Toast, soak and blend guajillo and chipotle chiles with garlic, cumin, oregano, cloves and vinegar.
  2. Coat beef thoroughly with chile marinade.
  3. Slow cook beef in broth with bay leaves at 160°C for 3.5 hours covered.
  4. Shred beef using two forks.
  5. Serve in warm tortillas with diced onion and cilantro.
