Ingredients
- 1000 g beef cheeks or short ribs
- 6 units guajillo chiles
- 2 units chipotle chiles
- 8 cloves garlic
- 30 ml white vinegar
- 3 g cumin
- 3 g oregano
- 3 units bay leaves
- 4 units cloves
- 250 ml beef broth
Instructions
- Toast, soak and blend guajillo and chipotle chiles with garlic, cumin, oregano, cloves and vinegar.
- Coat beef thoroughly with chile marinade.
- Slow cook beef in broth with bay leaves at 160°C for 3.5 hours covered.
- Shred beef using two forks.
- Serve in warm tortillas with diced onion and cilantro.
