  • beef sirloin, diced
  • bacon
  • red bell pepper
  • green bell pepper
  • yellow bell pepper
  • white onion
  • Oaxacan cheese
  • serrano chiles
  • garlic
  • corn tortillas

Ingredients

  • 600 g beef sirloin, diced
  • 150 g bacon
  • 1 unit red bell pepper
  • 1 unit green bell pepper
  • 1 unit yellow bell pepper
  • 200 g white onion
  • 200 g Oaxacan cheese
  • 2 units serrano chiles
  • 3 cloves garlic
  • 12 units corn tortillas

Instructions

  1. Dice bacon and fry until crispy, remove.
  2. In bacon fat sear diced beef until browned.
  3. Add sliced onion, peppers, serrano and garlic, stir-fry 5 min.
  4. Return bacon, stir to combine.
  5. Cover with shredded Oaxacan cheese, put lid on until melted.
  6. Serve directly from skillet with warm tortillas.
