Ingredients

  • 14.1 ozcooked risotto rice or leftover rice
  • 7.1 ozlean beef mince
  • 7 tbsptomato passata
  • 2.8 ozlow-fat mozzarella, cubed
  • 1 wholeegg, beaten
  • 1.1 ozParmigiano, grated
  • 2.8 ozbreadcrumbs
  • 0.5 wholeonion, finely diced
  • 1 to tastesalt and pepper

Instructions

  1. Cook mince with onion and passata 10 min; season; cool.
  2. Mix rice with Parmigiano and egg; season.
  3. Take a handful of rice, flatten, place a cube of mozzarella and spoon of ragù in centre.
  4. Close into a ball; coat in breadcrumbs.
  5. Bake at 200°C for 20–25 min until golden and crisp.
