- 100 g ground almonds
- 3 large eggs
- 25 g vanilla protein powder
- 2 tbsp honey
- 2 tsp lemon zest
- 0.5 tsp baking powder
- spray olive oil spray
- 1 tsp powdered sugar (for dusting)
Instructions
- Whisk eggs with honey until pale. Fold in ground almonds, protein powder, lemon zest, and baking powder.
- Pour into small oiled cake tin (18cm). Bake at 170°C for 25 minutes.
- Cool, dust with powdered sugar. Serve in slices.
