  • 10⅝ ozstale white bread cubed
  • 4.2 ozSpeck (South Tyrolean smoked ham) diced
  • 0.8 cupwhole milk
  • 3 wholeeggs
  • 2.8 ozonion finely diced
  • 20 gfresh chives chopped
  • 1⅜ ozplain flour
  • 6⅓ cupbeef stock
  • 20 gbutter
  • 15 gfresh parsley

Instructions

  1. Soak bread cubes in milk for 20 minutes until soft.
  2. Sauté onion in butter until golden; add speck and cook 3 minutes.
  3. Squeeze excess milk from bread; mix in eggs, flour, chives, parsley, and speck-onion mixture. Season.
  4. Shape into 8 golf-ball-sized dumplings with wet hands.
  5. Bring stock to a gentle simmer; cook dumplings for 15–18 minutes (do not boil).
  6. Serve 2 dumplings per bowl with plenty of hot broth and grated Parmesan.
