- mustard seeds

- green chili-ginger paste

- dry garlic chutney (lehsun chutney)
- oil for deep frying

Ingredients
- 4 medium potatoes, boiled and mashed
- 4 rolls pav (bread rolls)
- 0.75 cup chickpea flour (besan)
- 0.5 tsp mustard seeds
- 8 leaves curry leaves
- 1 tbsp green chili-ginger paste
- 0.5 tsp turmeric
- 4 tbsp dry garlic chutney (lehsun chutney)
- 2 cups oil for deep frying
- 1 tsp salt
Instructions
- Heat 1 tbsp oil; add mustard seeds, curry leaves, and chili-ginger paste; sizzle.
- Add mashed potatoes, turmeric, and salt; mix well. Shape into golf-ball-sized vadas.
- Whisk besan with turmeric, salt, and water to a thick batter.
- Dip each vada into batter; deep-fry in hot oil until golden and crisp, 3–4 minutes.
- Toast pav rolls on a buttered tawa until golden.
- Spread dry garlic chutney and green chutney on pav; place hot vada inside.
- Press together and serve immediately.
