Poha (Spiced Flattened Rice)

Ingredients

  • thick flattened rice (poha)
  • onion, finely diced
  • green chili, minced
  • mustard seeds
  • curry leaves
  • roasted peanuts
  • turmeric
  • sugar
  • oil
  • lemon juice
  • salt
  • sev and cilantro for garnish

Ingredients

  • 2 cups thick flattened rice (poha)
  • 1 medium onion, finely diced
  • 2 whole green chili, minced
  • 0.5 tsp mustard seeds
  • 10 leaves curry leaves
  • 3 tbsp roasted peanuts
  • 0.5 tsp turmeric
  • 0.5 tsp sugar
  • 2 tbsp oil
  • 1 tbsp lemon juice
  • 0.75 tsp salt
  • 2 tbsp sev and cilantro for garnish

Instructions

  1. Rinse poha in a colander under cold water; let it soften 2 minutes; drain well.
  2. Toss softened poha with turmeric, sugar, and salt; set aside.
  3. Heat oil; add mustard seeds and let splutter; add curry leaves and green chili.
  4. Add onion and sauté 3 minutes until soft.
  5. Add peanuts and toss 30 seconds; add the seasoned poha.
  6. Gently fold everything together; cover and heat on low 2 minutes.
  7. Sprinkle lemon juice; garnish with sev and cilantro. Serve warm.
