Ingredients

  • 2.2 lbchicken pieces, bone-in
  • 2 wholeonions, finely sliced
  • 3 wholetomatoes, chopped
  • 1.1 ozgarlic and ginger paste
  • 10 gblack peppercorns
  • 6 wholedried red chillies
  • 10 gcoriander seeds
  • 5 gcumin seeds
  • 5 gfennel seeds
  • 15 wholecurry leaves
  • 7 tbspcoconut milk (light)
  • 1 tbspoil
  • 1 to tastesalt

Instructions

  1. Dry roast peppercorns, red chillies, coriander, cumin, and fennel seeds until fragrant, ~2 min. Cool and grind to a coarse powder.
  2. Heat oil; fry curry leaves and onions until deeply golden, ~10 min.
  3. Add garlic-ginger paste; cook 2 min. Add tomatoes; cook until oil separates, ~8 min.
  4. Add ground spice powder and chicken pieces; coat well. Cook on high 3 min.
  5. Add coconut milk and 100 ml water; cover and cook 20 min until chicken is tender.
  6. Simmer uncovered 5 min to thicken. Serve with rice or parotta.
