  • 0.5 medium onion, finely diced
  • 0.5 medium tomato, finely diced
  • 1 whole green chili, minced
  • 0.5 tsp ginger, grated
  • 0.5 tsp cumin seeds
  • 0.25 tsp turmeric
  • 0.5 tsp red chili powder
  • 2 tbsp oil
  • 0.75 tsp salt

Instructions

  1. Whisk besan with all vegetables, spices, and salt in a bowl.
  2. Add water gradually to make a smooth, pourable batter (consistency of dosa batter).
  3. Heat a non-stick pan over medium heat; brush with oil.
  4. Pour a ladleful of batter and spread into a thin circle.
  5. Drizzle oil around the edges; cook 2–3 minutes until edges crisp.
  6. Flip and cook other side 2 minutes until golden.
  7. Serve with green chutney or yogurt.
