Ingredients

  • 1.8 lbthin beef escalopes (milanesa cut)
  • 3 wholehard-boiled eggs, sliced
  • 2 wholecarrots, cut in thin sticks
  • 15 gfresh flat-leaf parsley, chopped
  • 14.1 ozcanned crushed tomatoes
  • 1 wholeonion, finely diced
  • 3 clovesgarlic cloves, minced
  • 1.1 cupbeef stock (low sodium)
  • 3 gdried oregano
  • 1 tbspoil
  • 1 to tastesalt and black pepper

Instructions

  1. Pound beef slices to even thickness. Season both sides with salt, pepper, and parsley.
  2. Lay egg slices and carrot sticks across each slice. Roll tightly and secure with kitchen twine or toothpicks.
  3. Heat oil in a wide pan; brown rolls on all sides over high heat, ~5 min.
  4. Add onion and garlic; cook 2 min. Pour in crushed tomatoes, stock, and oregano.
  5. Cover and braise on low heat 40–45 min until beef is tender. Remove twine before serving.
  6. Serve with white rice or mashed potatoes.
