  • 2.2 lbrabbit portions
  • 1⅜ ozwholegrain mustard
  • 20 gDijon mustard
  • 0.8 cupdry white wine
  • ⅝ cuplight cream
  • 4 wholeshallots chopped
  • 6 gfresh thyme
  • 1 tbspolive oil

Instructions

  1. Coat rabbit pieces with both mustards; marinate 30 min.
  2. Brown in oil; remove.
  3. Sauté shallots; deglaze with wine; add thyme.
  4. Return rabbit; cover and braise 50 min.
  5. Stir in cream; simmer uncovered 10 min. Serve with rice or tagliatelle.
