Ingredients
- 1.1 lbsalt cod (morue), desalted overnight
- 10.6 ozpotatoes, boiled and mashed
- 4 tbspolive oil
- 5 tbsplow-fat milk, warm
- 2 wholegarlic cloves
- 1 tbsplemon juice
- 1 to tasteblack pepper
- 4 slicescrusty baguette slices (to serve)
Instructions
- Simmer desalted cod in water 10 min; drain and flake, removing bones.
- Blend cod with garlic in a food processor.
- With motor running, drizzle in olive oil, then warm milk alternately until creamy.
- Fold in mashed potato; season with lemon juice and pepper.
- Serve warm with toasted baguette. Optionally bake at 200°C for 10 min for a golden top.
