  • corn tortillas
  • guajillo chiles
  • ancho chiles
  • garlic
  • chicken broth
  • Oaxacan cheese
  • onion
  • Mexican cream
  • vegetable oil

Ingredients

  • 600 g chicken breast
  • 12 units corn tortillas
  • 6 units guajillo chiles
  • 2 units ancho chiles
  • 4 cloves garlic
  • 400 ml chicken broth
  • 200 g Oaxacan cheese
  • 100 g onion
  • 100 ml Mexican cream
  • 30 ml vegetable oil

Instructions

  1. Boil and shred chicken breasts.
  2. Toast and soak guajillo and ancho chiles.
  3. Blend soaked chiles with garlic, onion and broth.
  4. Fry sauce in oil until thickened, season.
  5. Dip tortillas in hot sauce, fill with chicken and roll.
  6. Place in baking dish, cover with remaining sauce and cheese.
  7. Bake at 180°C for 20 min until bubbly.
  8. Serve topped with cream and sliced onion.
