Ingredients
- 600 g chicken breast
- 12 units corn tortillas
- 6 units guajillo chiles
- 2 units ancho chiles
- 4 cloves garlic
- 400 ml chicken broth
- 200 g Oaxacan cheese
- 100 g onion
- 100 ml Mexican cream
- 30 ml vegetable oil
Instructions
- Boil and shred chicken breasts.
- Toast and soak guajillo and ancho chiles.
- Blend soaked chiles with garlic, onion and broth.
- Fry sauce in oil until thickened, season.
- Dip tortillas in hot sauce, fill with chicken and roll.
- Place in baking dish, cover with remaining sauce and cheese.
- Bake at 180°C for 20 min until bubbly.
- Serve topped with cream and sliced onion.
