Ingredients
- 500 g pork tenderloin
- 4 piece garlic cloves
- 30 ml lime juice
- 5 g paprika
- 3 g cumin
- 7 g salt
- 25 ml olive oil
- 25 g fresh parsley
- 15 g fresh cilantro
- 20 ml red wine vinegar
- 2 g chili flakes
Instructions
- Marinate pork in garlic, lime, paprika, cumin, salt, and half the olive oil for 1 hour.
- Grill pork over medium-high heat, turning, for 18-22 minutes until internal temp is 63°C.
- Rest 5 minutes before slicing.
- Blend parsley, cilantro, vinegar, remaining olive oil, chili, and salt for chimichurri.
- Slice pork and serve drizzled with chimichurri.
