  • 700 g free-range chicken pieces
  • 1 large onion
  • 4 piece garlic cloves
  • 2 medium tomatoes
  • 1 piece bell pepper (green)
  • 2 medium potato
  • 20 ml olive oil
  • 2 piece bay leaves
  • 7 g salt
  • 15 g parsley
  • 500 ml water

Instructions

  1. Brown chicken pieces in olive oil on all sides over medium-high heat.
  2. Add onion, garlic, pepper, and tomatoes. Cook 5 minutes.
  3. Pour in water and add bay leaves. Bring to boil.
  4. Add potato, reduce heat, cover, and simmer 35-40 minutes until very tender.
  5. Season, garnish with parsley, and serve with rice.
