Ingredients

  • 10⅝ ozcanjiquinha (cracked hominy/canjica branca grossa)
  • 1⅓ lbpork spare ribs
  • 5⅓ ozsmoked linguiça sausage sliced
  • 5⅓ ozonion diced
  • 3 wholegarlic cloves minced
  • 1⅛ ozgreen onions sliced
  • 15 gfresh parsley
  • 5⅛ cuppork stock or water
  • 2 tbspvegetable oil

Instructions

  1. Soak canjiquinha in cold water for 2 hours; drain.
  2. Season ribs with salt and pepper; sear in oil until browned on all sides.
  3. Add onion, garlic, and linguiça; sauté 5 minutes.
  4. Add canjiquinha and stock; bring to a boil.
  5. Reduce heat to low; cover and cook 75 minutes, stirring occasionally, until grits are creamy and ribs are tender.
  6. Adjust seasoning, scatter green onion and parsley, and serve from the pot.
