Ingredients

  • 300 g beef sirloin strips
  • 300 g sweet potato (cubed)
  • 150 g black beans (cooked)
  • 1 medium avocado
  • 200 g brown rice (cooked)
  • 2 piece garlic cloves
  • 20 ml lime juice
  • 15 ml olive oil
  • 5 g salt
  • 4 g paprika
  • 15 g green onion

Instructions

  1. Roast sweet potato cubes with olive oil and salt at 200°C for 20 minutes.
  2. Season beef with salt, paprika, and garlic. Stir-fry in a hot pan 5-6 minutes.
  3. Warm black beans with a pinch of cumin and salt.
  4. Layer rice, beans, roasted sweet potato, and beef in a bowl.
  5. Top with sliced avocado, green onion, and lime juice.
