  • sea salt
  • flat-leaf parsley

  • 300 g tiger prawns shell-on
  • 4 whole garlic cloves
  • 40 ml lime juice
  • 1 whole red chilli
  • 20 ml olive oil
  • 2 g sea salt
  • 10 g flat-leaf parsley

Instructions

  1. Butterfly prawns by cutting along the back and removing the vein.
  2. Mince garlic and chilli; mix with lime juice and olive oil.
  3. Toss prawns in marinade; rest 15 min.
  4. Grill on high heat 2 min per side until pink.
  5. Garnish with parsley and serve immediately.
