  • wattleseed powder
  • lemon myrtle powder
  • mountain pepper
  • garlic cloves
  • olive oil
  • sea salt

Ingredients

  • 200 g kangaroo rump steak
  • 3 g wattleseed powder
  • 2 g lemon myrtle powder
  • 1 g mountain pepper
  • 2 whole garlic cloves
  • 15 ml olive oil
  • 2 g sea salt

Instructions

  1. Combine wattleseed, lemon myrtle, mountain pepper, and salt.
  2. Coat steak in olive oil then press herb crust onto both sides.
  3. Heat cast iron pan over high heat.
  4. Cook 2–3 min per side for medium-rare.
  5. Rest 5 min before slicing.
