Ingredients
- 4 whole eggs
- 100 g chorizo
- 80 g roasted red capsicum
- 200 g canned diced tomatoes
- 2 whole garlic cloves
- 2 g cumin
- 10 ml olive oil
- 10 g flat-leaf parsley
Instructions
- Slice chorizo and brown in cast iron skillet over campfire.
- Add garlic and cumin; stir 1 min.
- Add tomatoes and capsicum; simmer 5 min.
- Make 4 wells; crack an egg in each.
- Cover with lid or foil; cook 6–8 min until whites set.
- Scatter parsley and serve in the pan.
